Traditional Irish Fruit-Cake Recipe

Crazy about Cakes
This recipe is for a traditional Irish boiled porter cake, popular for Christmas and Wedding celebrations.
1 lb plain flour
1/2 lb butter
1/2lb brown sugar
3 large eggs
1/2 teasp. bread soda
2 teasp.mixed spice
1/2 pint Guinness
1lb sultanas/raisins
4oz halved cherries
4oz mixed spice
grated rind of one orange
Add fruit (except cherries) and bring gradually to the boil. Boil for 3-4 minutes stirring frequently.
Cool to lukewarm.
Sieve,flour, bread soda and spice into a large mixing bowl.
Add lightly beaten eggs and stirr well until evenly mixed.
Add cooled fruit mixture and cherries and stir well.
Fold in grated orange rind.
Bake in a double-lined 9" tin at 180d egrees celcius for one hour, and a further 1 to 1 1/2 hrs at 160 degrees celcius. When top has browned, cover loosly with brown paper.
Allow to mature for 2-3 weeks before using
